{yum delicious}

(i got so excited to take the picture i forgot to put on the dressing... but you get the picture.)

this very fine evening miss j. dub and i made some yumm-o knock of costa vida salads. and boy were they good. want the recipe? ok!

so i like chicken, therefore i made chicken. i didnt bother doing anything fancy with it. just ate it raw.
kidding my friends.
i cooked it up in my handy George with a little season salt, garlic and onion powder. then i shredded it. word?

here are the recipes i used to make everything else.


modify it as you will, i sure would!


Creamy Ranch Dressing
  • 3 fresh tomatillas, cut them up. its easier that way
  • 1 lime, just the juice

  • 1/2 bunch of cilantro (i like to cutback on the cilantro, it makes my breathing hurt. i aint the biggest fan of it)

  • 5 green onions with the little white things left on

  • 1 jalepeno, use half if you dont like it hot

  • 2 cloves garlic, mash those babies up

  • 1 package of ranch dressing mix

  • 1/2 cup buttermilk

  • 1/2 cup sour cream

  • 1/2 cup mayo

throw it all together in the blender and whip her up nice and good. put it in the fridge for a little bit to thicken up.

Yummyness Rice

  • 1 lime, just the juice

  • 4 teaspoons chicken bollion
  • 3 garlic cloves all mashed up

  • 1 can green chilis

  • 1/2 bunch cilantro

  • 1 onion or some onion flakes, whatever you go

  • 1 1/2 cups rice

  • 3 cups H2O

Put everything in a saute pan except the rice and water. add a little butter/oil and fry it up. add the rice, keep frying. after you have suffeciently fried add the water and bring it to a boil. turn it on low and stop stirring. dont touch it. not until its done.

the Beans (watch out, this one gets complicated)
  • 1 can. pinto or black, whatever your little heart desires. heat it up. i put mine in a cast iron skillet with some minced garlic and salt and crap. (not literally crap, that would be gross)

get some lettuce. put the goods on top (i.e. chicken, rice, beans, etc.) pour on some of the delish dressing and eat it all up.
